Prepare the Potatoes

Boil the potatoes until fork-tender, about 15-20 minutes. Drain and let cool slightly, then smash them gently with the palm of your hand. Season with salt and pepper.

Roast the Jalapenos

Preheat the oven to 400°F (200°C). Place jalapenos on a baking sheet and roast for 15 minutes or until slightly charred. Remove from oven, let cool, then chop.

Cook the Steak

Season the KC strip with salt and pepper. In a hot skillet, sear the steak for 4-5 minutes on each side for medium-rare, adjusting time based on thickness. Let rest for a few minutes before slicing.

Cook the Eggs

In the same skillet, crack the eggs and cook to your liking (sunny side up, scramble, etc.).

Make the Horseradish Aioli

In a bowl, mix mayonnaise and horseradish together until well combined. Adjust horseradish to taste.

Assemble the Dish

On a plate, place the smashed potatoes, top with sliced steak, and arrange the eggs on the side. Drizzle chimichurri sauce over the steak and add pickled onions and roasted jalapenos on top. Serve with horseradish aioli on the side.
