Prepare the Grits

In a large pot, bring 4 cups of water to a boil. Stir in the grits and salt. Reduce heat to low, cover, and cook for about 20-25 minutes, stirring occasionally until thickened.

Add Cheese and Poblano

Once the grits are cooked, stir in the butter, white cheddar cheese, and diced poblano pepper. Mix well and set aside.

Prepare the Country Gravy

In a skillet, melt 4 tablespoons of butter over medium heat. Whisk in 1 cup of flour and cook for about 2 minutes. Gradually add 2 cups of milk, whisking continuously until the mixture thickens. Season with salt and pepper.

Fry the Steak

Season the beef sirloin with salt and pepper. Dredge each steak in flour, shaking off excess. Heat vegetable oil in a skillet over medium-high heat. Fry the steaks for about 4-5 minutes per side until golden brown and cooked to your liking. Remove from the skillet and let rest.

Fry the Eggs

In the same skillet, crack the eggs and fry them to your desired doneness.

Serve

Plate the fried steak, top with country gravy, and serve alongside corn relish and fried eggs. Add a generous scoop of white cheddar-poblano grits on the side.
