Make the Biscuits
Preheat your oven to 450°F (230°C). In a large bowl, mix together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Turn the dough out onto a floured surface and knead gently. Roll out to about 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 12-15 minutes, or until golden brown.

Prepare the Sausage Gravy
In a skillet over medium heat, cook the breakfast sausage until browned and crumbly. Sprinkle in the flour and stir to combine, cooking for an additional minute. Gradually whisk in the milk, stirring constantly until the gravy thickens. Season with black pepper and salt to taste.

Serve
Split the biscuits in half and ladle the sausage gravy over the top. For an additional charge, add cooked sausage patties or bacon on the side.
