Chicken Marinade

Preparing the Chicken

    Marinate the Chicken

    In a large bowl, combine olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, cayenne pepper, apple cider vinegar, and honey. Mix well to form a marinade.

    Add Chicken to Marinade

    Add the halved chicken to the marinade, ensuring it is well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight.

    Preheat the Smoker

    Preheat your smoker to 250°F (121°C) using your choice of wood chips for smoking, such as hickory or applewood.

    Smoke the Chicken

    Remove the chicken from the marinade and place it skin side up on the smoker rack. Smoke for approximately 2 to 3 hours or until the internal temperature reaches 165°F (74°C).

Making the Carolina White BBQ Sauce

    Combine Sauce Ingredients

    In a mixing bowl, whisk together mayonnaise, apple cider vinegar, prepared horseradish, black pepper, salt, sugar, hot sauce, and garlic powder until smooth.

    Chill the Sauce

    Cover and refrigerate the sauce for at least 30 minutes to allow the flavors to meld.

Serving the Dish

    Serve the Smoked Chicken

    Once the chicken is done, remove it from the smoker and let it rest for 10 minutes before carving. Serve with the chilled Carolina white BBQ sauce on the side.
