Method

Cooking the Salmon

    Prepare the Salmon

    Pat the salmon fillets dry with paper towels. Season both sides with olive oil, salt, black pepper, and lime juice.

    Heat a grill pan or skillet over medium-high heat. Place the salmon fillets skin-side down (if they have skin) and cook for about 4-5 minutes on each side, or until cooked through and flaky.

Making the Jalapeno Slaw

    In a large bowl, combine the cabbage, shredded carrot, and finely chopped jalapeno.

    Add lime juice, salt, and chopped coriander to the cabbage mixture. Toss well to combine. Set aside to let the flavors meld.

Making the Avocado Crema

    In a blender or food processor, combine ripe avocados, sour cream (or Greek yogurt), lime juice, and salt.

Assembling the Tacos
