Method
Cooking the Salmon

Prepare the Salmon
Season the salmon fillets with olive oil, salt, and black pepper on both sides. Squeeze fresh lime juice over them.

Making the Jalapeno Slaw

Combine Ingredients
In a large bowl, combine the shredded cabbage, grated carrots, minced jalapeno, and chopped cilantro.

Dress the Slaw
Add lime juice and salt to the bowl. Toss everything together until well combined. Set aside to marinate for at least 15 minutes.
Making the Avocado Crema

Blend the Crema
In a blender, combine the ripe avocado, sour cream, lime juice, and salt. Blend until smooth and creamy. Adjust salt to taste.
Making the Chipotle Aioli

Mix the Aioli
In a bowl, mix together the mayonnaise, chipotle in adobo sauce, lime juice, and minced garlic until well combined. Adjust seasoning to taste.
Making the Salsa Roja

Combine Salsa Ingredients
In a bowl, combine diced tomatoes, chopped onion, minced jalapeno, chopped cilantro, lime juice, and salt. Mix well and set aside.
Assembling the Tacos

Warm the Tortillas
Heat the corn tortillas on a skillet or in the microwave until warm and pliable.

Assemble the Tacos
On each tortilla, place a portion of the cooked salmon, top with jalapeno slaw, drizzle with avocado crema and chipotle aioli, and add a spoonful of salsa roja. Serve with lime wedges.
