Meatballs

Skillet Toast

Method

Meatballs

  1. 1

    Prepare the Meatball Mixture

In a large bowl, combine ground pork, ricotta cheese, minced garlic, chopped basil, grated Parmesan, egg, bread crumbs, salt, and black pepper. Mix until well combined.

  2. 2

    Form the Meatballs

Using your hands, form the mixture into 1-inch meatballs and place them on a baking sheet.

  3. 3

    Cook the Meatballs

Preheat your oven to 400°F (200°C). Bake the meatballs for 20-25 minutes, or until cooked through and golden brown.

Roasted Tomatoes

  1. 4

    Prepare the Tomatoes

While the meatballs are baking, wash the cherry tomatoes and place them in a baking dish.

  2. 5

    Season the Tomatoes

Drizzle the tomatoes with olive oil, balsamic vinegar, salt, and black pepper. Toss to coat.

  3. 6

    Roast the Tomatoes

Roast in the same oven as the meatballs for about 15-20 minutes, or until the tomatoes are blistered and juicy.

Skillet Toast

  1. 7

    Prepare the Toast

In a skillet, heat olive oil over medium heat.

  2. 8

    Toast the Bread

Add the sliced crusty bread to the skillet and toast on both sides until golden brown, about 2-3 minutes per side.

  3. 9

    Add Garlic Flavor

Rub the toasted bread with the cut side of the whole garlic clove for added flavor.

Garnish

  1. 10

    Prepare the Garnish

Once the meatballs and tomatoes are done, garnish with fresh basil leaves and shaved Parmesan cheese before serving.
