Meatballs Preparation

Mix the Meatball Ingredients
In a large mixing bowl, combine the ground pork, ricotta cheese, minced garlic, grated parmesan, chopped basil, egg, salt, black pepper, and breadcrumbs. Mix until just combined.

Form the Meatballs
Using your hands, form the mixture into meatballs, about 1.5 inches in diameter. Place them on a parchment-lined baking sheet.

Prepare the Tomatoes
Preheat your oven to 200°C (400°F). In a bowl, toss the cherry tomatoes with olive oil, salt, black pepper, and basil leaves.

Roast the Tomatoes
Spread the tomatoes on a baking sheet and roast in the oven for about 20-25 minutes, or until they are blistered and caramelized.

Cook the Meatballs
While the tomatoes are roasting, heat a large skillet over medium heat with a little olive oil. Add the meatballs in batches, cooking for about 4-5 minutes on each side, until browned and cooked through.

Toast the Bread
In the same skillet, add a little more olive oil. Toast the sliced bread on each side until golden brown. Rub the toasted bread with a whole garlic clove for flavor.

Serve the cooked meatballs on a plate topped with roasted tomatoes, a sprinkle of extra parmesan, and garnish with fresh basil. Serve alongside the garlic toast.
