Preparation of Fries

    Prepare the Potatoes

    Wash and peel the Kennebec or sweet potatoes. Cut them into uniform sticks, about 1/4 inch thick.

    Soak the Fries

    Place the cut fries in a large bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Dry the Fries

    Drain the soaked fries and pat them dry with paper towels to remove moisture.

    Heat the Beef Tallow

    In a large pot, heat the beef tallow over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add the fries to the hot tallow in batches, frying for 5-7 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle them with salt to taste.

Preparation of Cajun Remoulade

    Mix the Ingredients

    In a medium bowl, combine the mayonnaise, Dijon mustard, Cajun seasoning, minced garlic, lemon juice, and hot sauce.

    Whisk Together

    Whisk the mixture until smooth and well combined.

    Chill the Sauce

    Cover and refrigerate the remoulade for at least 30 minutes before serving.
