    Prepare the Vegetables

    Wash and clean all the vegetables. Slice the cipollini onions into halves, portobello mushrooms into thick slices, sweet peppers into strips, and squash into rounds. Trim the ends of the broccolini and cut the avocado in half, removing the pit.

    Prepare the Corn

    If using fresh corn, cut the kernels off the cob. If using frozen, thaw the corn kernels.

    Marinate the Vegetables

    In a large bowl, combine the sliced vegetables with olive oil, the juice of half the lemon, and a sprinkle of Maldon salt. Toss well to ensure all vegetables are coated.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Vegetables

    Place the marinated vegetables on the grill. Grill for about 5-7 minutes on each side or until tender and slightly charred.

    Grill the Proteins (if using)

    If you are adding chicken, salmon, shrimp, or steak, grill them according to their specific cooking times: Chicken (6-8 minutes per side), Salmon (4-5 minutes per side), Shrimp (2-3 minutes per side), and Steak (5-7 minutes per side, depending on thickness).

    Plating the Dish

    Once everything is grilled, transfer the vegetables and proteins to a serving platter. Squeeze the remaining lemon juice over the top and add a pinch more Maldon salt if desired.
