Preparation

    Prepare the Vegetables

    Wash and cut the cipollini onions in half, remove the stems from the portobello mushrooms, and slice them into thick pieces. Trim the ends of the baby carrots, slice the sweet peppers into strips, and cut the squash into rounds. Rinse the broccolini and set it aside.

    Prepare the Avocado and Lemon

    Halve the avocado, remove the pit, and slice it into wedges. Cut the lemon in half and set aside for juicing later.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat, approximately 400°F (200°C).

    Season the Vegetables

    In a large bowl, combine the prepared vegetables. Drizzle with olive oil and sprinkle with Maldon salt. Toss to coat evenly.

    Grill the Vegetables

    Place the seasoned vegetables directly on the grill. Grill each type of vegetable for about 5-7 minutes, turning occasionally until tender and slightly charred. Begin with the denser vegetables like onions and mushrooms, and add the softer ones like broccolini and baby carrots later.

    Grill Optional Add-ons

    If adding protein, season the chicken, salmon, shrimp, or steak with olive oil, salt, and pepper. Grill them according to the following: Chicken for about 6-7 minutes per side, salmon for about 4-5 minutes per side, shrimp for about 2-3 minutes per side, and steak for about 5-6 minutes per side for medium.

Serving

    Plate the Grilled Veggies

    Once the vegetables are grilled and charred, remove them from the grill and arrange them on a platter. Add the grilled protein if using.

    Garnish and Serve

    Squeeze fresh lemon juice over the grilled veggies and protein. Serve immediately with avocado wedges on the side.
