Method

Grill the Steak

  1. 1

    Preheat the Grill

Preheat the grill to high heat.

  2. 2

    Prepare the Steak

Rub the flat iron steak with olive oil, salt, and black pepper. Let it sit for about 15 minutes at room temperature.

  3. 3

    Grill the Steak

Place the steak on the grill and cook for about 4-5 minutes per side for medium-rare, or until desired doneness.

  4. 4

    Rest the Steak

Remove the steak from the grill and let it rest for 5 minutes before slicing against the grain.

Make Chimichurri Sauce

  1. 5

    Combine Ingredients

In a bowl, combine the chopped parsley, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt.

  2. 6

    Mix Chimichurri

Stir well until all ingredients are mixed thoroughly. Adjust seasoning to taste.

Prepare Broccolini

  1. 7

    Blanch Broccolini

In a pot of boiling salted water, blanch the broccolini for 2-3 minutes until bright green and tender-crisp.

  2. 8

    Season Broccolini

Drain and toss with olive oil, salt, and black pepper before serving.

Fry Eggs

  1. 9

    Melt Butter

In a non-stick skillet, melt butter over medium heat.

  2. 10

    Fry Eggs

Crack the eggs into the skillet and fry them until the whites are set and the yolks are cooked to your liking.

Prepare Dirty Fries

  1. 11

    Cook Fries

Cook the frozen French fries according to package instructions until crispy.

  2. 12

    Make Dirty Fries

Top the fries with grated cheddar cheese and bacon bits, then place them under the broiler for 1-2 minutes until the cheese is melted.

  3. 13

    Garnish Fries

Garnish with chopped green onions before serving.
