Method

For the Grilled Flat Iron Steak

    Prepare the Steak

    Take the flat iron steak out of the refrigerator and let it come to room temperature for about 30 minutes. Rub both sides with olive oil, salt, and black pepper.

    Grill the Steak

    Preheat your grill to medium-high heat. Place the steak on the grill and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is achieved. Remove from the grill and let it rest for 10 minutes before slicing.

For the Broccolini

    Prepare the Broccolini

    In a large pot of boiling salted water, blanch the broccolini for 2-3 minutes until bright green. Drain and set aside.

    Sauté the Broccolini

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 30 seconds. Add the blanched broccolini, salt, and red pepper flakes, and sauté for an additional 2-3 minutes until tender.

For the Chimichurri Sauce

    Make Chimichurri

    In a food processor, combine parsley, cilantro, garlic, red wine vinegar, olive oil, salt, black pepper, and red pepper flakes. Pulse until finely chopped but not pureed. Adjust seasoning to taste and set aside.

For the Fried Eggs

    Fry the Eggs

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and pepper to taste.

For the Dirty Fries

    Prepare the Fries

    Cook the frozen fries according to package instructions until golden brown and crispy. This usually takes about 20-25 minutes.

    Assemble the Dirty Fries

    Once fries are cooked, place them on a serving platter. Top with cheddar cheese, cooked bacon, green onions, and a drizzle of sour cream.
