Caramelized Onions

    Caramelize the Onions

    In a skillet over medium heat, add olive oil. Once hot, add the sliced medium onion. Stir occasionally until the onions are golden brown and caramelized, about 15-20 minutes. Once done, set aside.

Tomato Soup

    Prepare the Soup Base

    In a pot, heat 1 tablespoon of olive oil over medium heat. Add chopped small onion and minced garlic, sauté until the onions are translucent, about 3-4 minutes.

    Add Tomatoes and Broth

    Add the canned tomatoes, vegetable broth, salt, black pepper, dried basil, and sugar to the pot. Stir well and bring to a boil.

    Simmer the Soup

    Reduce heat to low and let the soup simmer for about 20 minutes, allowing the flavors to meld.

    Blend the Soup

    Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer to a blender and blend in batches.

Grilled Cheese Sandwiches

    Prepare the Cheese Mixture

    In a bowl, combine the shredded havarti, gruyere, and white cheddar cheeses.

    Assemble Sandwiches

    Spread the apple mustard on one side of each slice of sourdough bread. On the other side, spread sage butter. Place a generous amount of the cheese mixture and some of the caramelized onions between two slices, buttered sides out.

    Grill the Sandwiches

    Heat a skillet over medium heat. Add the assembled sandwiches and grill until golden brown and the cheese is melted, about 4-5 minutes per side.
