Grilled Cheese Sandwich

    Prepare the Ingredients

    Gather all the ingredients for the grilled cheese sandwich. Slice the Havarti, Gruyere, and white cheddar cheeses if they are not pre-sliced. Prepare the caramelized onions if not already done.

    Assemble the Sandwich

    Spread the apple mustard on one side of each slice of sourdough bread. Layer the Havarti, Gruyere, and white cheddar cheeses evenly on two of the slices. Top the cheese with the caramelized onions.

    Top and Butter

    Place the other two slices of bread on top of the cheese and onions. Spread sage butter generously on the outer sides of each sandwich.

    Grill the Sandwiches

    Heat a skillet over medium heat. Once hot, place the sandwiches in the skillet. Grill for 3-4 minutes on each side until the bread is golden brown and the cheese is melted. Remove from skillet and set aside.

Tomato Soup

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add minced garlic and sauté for an additional minute until fragrant.

    Add Tomatoes and Broth

    Pour in the canned crushed tomatoes and vegetable broth. Stir in dried basil, and season with salt and black pepper to taste. Bring the mixture to a simmer.

    Simmer the Soup

    Let the soup simmer for 15-20 minutes, allowing the flavors to meld together. Stir occasionally.

    Blend and Serve

    Using an immersion blender (or transferring to a regular blender in batches), blend the soup until smooth. Stir in heavy cream for added richness before serving.
