Method

Preparing the Steak

    Season the Steak

    Rub the ribeye steak with olive oil, then season generously with salt, black pepper, rosemary, and thyme. Allow it to sit at room temperature for about 30 minutes.

    Grill the Steak

    Preheat the grill to high heat. Place the steak on the grill and cook for about 4-5 minutes per side for medium-rare, or to your desired doneness. Remove from grill and let it rest for 5-10 minutes before slicing.

    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Wash and halve the fingerling potatoes.

    Season and Roast

    In a bowl, toss the potatoes with olive oil, rosemary, minced garlic, salt, and black pepper. Spread them on a baking sheet in a single layer and roast for 25-30 minutes, or until golden and tender.

Onion Strings

    Soak the Onions

    Slice the large onion into thin rings and soak them in buttermilk for at least 30 minutes.

    Prepare the Coating

    In a bowl, combine flour, cornstarch, salt, and black pepper.

    Fry the Onion Strings

    Heat oil in a frying pan over medium heat. Remove onion rings from buttermilk, dredge in the flour mixture, and fry in the hot oil until golden brown, about 2-3 minutes. Drain on paper towels.

Red Wine Jus

    Sauté the Shallots

    In a saucepan, melt the butter over medium heat. Add the diced shallots and sauté until they are translucent, about 3-4 minutes.

    Prepare the Jus

    Pour in the red wine and beef stock, bring to a boil, then reduce heat and let simmer until reduced by half, about 10-15 minutes. Season with salt and black pepper to taste.
