Prepare the Tortillas
Cut the yellow and blue corn tortillas into quarters. In a large skillet, heat a small amount of oil over medium heat, and fry the tortilla pieces until they are crispy and golden brown. Remove and drain on paper towels.

Combine with Salsa Verde
In the same skillet, lower the heat and add the salsa verde. Add the crispy tortilla pieces and gently toss to coat them with the salsa.

Add Cotija Cheese
Sprinkle the cotija cheese over the chilaquiles and mix gently to allow it to melt slightly.

Serve the Dish
On a plate, layer the chilaquiles, top with sliced ribeye steak, and place the fried eggs on top. Garnish with additional cotija cheese if desired, and serve immediately.
