Prepare the Beef Patties
In a mixing bowl, combine the grass-fed ground beef, salt, and black pepper. Mix gently until combined, being careful not to overwork the meat. Divide the mixture into two equal portions and shape them into patties, about ¾ inch thick.

Assemble the Burger

Toast the Brioche Buns
While the patties are cooking, lightly toast the brioche buns on the grill or in a toaster until they are golden brown.

Add the Fixings
On the bottom half of each toasted brioche bun, place a lettuce leaf, a slice of tomato, and a couple of onion slices. Add the cooked beef patty with melted cheddar cheese on top. Finish with pickles and the top half of the bun.
Optional Add-ons

Add Avocado
Slice the avocado in half, remove the pit, and scoop out the flesh. Slice it into thin pieces and place on top of the burger before adding the top bun.

Add Bacon
Cook the bacon slices in a skillet over medium heat until crispy. Drain on paper towels and place on top of the burger before adding the top bun.
