Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow or damaged outer leaves. Cut them in half lengthwise.

Cook the Bacon
In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and let it drain on paper towels. Reserve 1 tablespoon of bacon fat in the skillet.

Sauté Shallots
Add the sliced shallots to the skillet with the reserved bacon fat. Sauté for 3-4 minutes until they are soft and translucent.

Fry the Brussels Sprouts
Add the halved Brussels sprouts to the skillet with the sautéed shallots. Cook for about 10-12 minutes, stirring occasionally, until they are crispy and golden brown.

Make the Vinaigrette
In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until well combined.

Combine and Serve
Crumble the cooked bacon over the Brussels sprouts and drizzle with the vinaigrette. Toss to coat. Top with grated Parmesan cheese and serve warm.
