Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow or damaged outer leaves. Cut them in half lengthwise.

Cook the Bacon
In a large skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove and place on a paper towel to drain excess fat. Reserve the bacon fat in the skillet.

Sauté Shallots
Add the sliced shallots to the skillet with reserved bacon fat and sauté for about 2-3 minutes until they are soft and translucent.

Fry the Brussels Sprouts
Increase the heat to medium-high. Add the halved Brussels sprouts to the skillet, cut side down. Fry for about 5-6 minutes until they are golden brown and crispy. Toss them occasionally to ensure even cooking.

Prepare the Vinaigrette
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt, and black pepper until well combined.

Finish with Parmesan
Remove from heat and sprinkle the grated Parmesan cheese over the warm Brussels sprouts mixture. Toss again lightly to combine.
