Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

Cut in Butter
Add the cold, cubed unsalted butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

Stir in the shredded sharp cheddar cheese until evenly distributed.

Pour in the buttermilk and gently mix until just combined. Be careful not to overmix; the dough should be slightly sticky.

Turn the dough out onto a floured surface and pat it into a 1-inch thick rectangle. Using a biscuit cutter or a knife, cut out biscuits and place them on a baking sheet lined with parchment paper.
