Preparation of Brisket

Prepare the Brisket
If not already cooked, season the brisket with salt and pepper. Smoke or slow-cook the brisket at 225°F (107°C) until it reaches an internal temperature of 195°F (90°C). This could take around 8-12 hours. Once cooked, let it rest for at least 30 minutes before slicing.

Toast the Rolls
Slice the French rolls in half and lightly toast them on a grill or in an oven until golden brown.

Layer the Ingredients
On the bottom half of each toasted roll, place a generous portion of sliced brisket.

Add Toppings
Drizzle BBQ sauce over the brisket, then add a handful of crispy onions and top with pickled jalapenos according to your spice preference.

Finish the Sandwich
Place the top half of the roll on the sandwich. Press down gently to compact the ingredients.

Cut the sandwich in half if desired and serve immediately with extra BBQ sauce on the side.
