    Prepare the Vegetables

    Remove any outer leaves from the red cabbage, then cut it into quarters and remove the core. Slice the cabbage thinly. Peel and slice the onion. Core and chop the apple into small pieces.

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced onion and sauté until it becomes translucent, about 5 minutes.

    Stir in the sliced red cabbage and chopped apple, cooking for an additional 5 minutes until they begin to soften.

    Pour in the apple cider vinegar and vegetable broth. Add the brown sugar, salt, black pepper, ground cinnamon, and cloves. Stir well to combine all ingredients.

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 45 minutes, stirring occasionally until the cabbage is tender and the flavors have melded.
