Beef Brisket Preparation

    Sear the Brisket

    Heat olive oil in a large skillet over medium-high heat. Season the brisket with salt and black pepper, then sear on all sides until browned. Remove from skillet and set aside.

    Sauté Aromatics

    In the same skillet, add chopped onion and minced garlic. Sauté for about 3-4 minutes until translucent.

    Cook the Brisket

    Transfer the brisket to a slow cooker. Add the sautéed onion and garlic, smoked paprika, cumin, brown sugar, and beef broth. Cover and cook on low for 8 hours or until the meat is tender.

    Shred the Brisket

    Once cooked, remove the brisket from the slow cooker and shred with two forks. Return the shredded meat to the cooker to absorb the juices.

Pulled Pork Preparation

    Cook the Pork

    Transfer the pork shoulder to a slow cooker. Add the sautéed onion and garlic, smoked paprika, cumin, brown sugar, and apple cider vinegar. Cover and cook on low for 8 hours or until the meat is tender.

    Once cooked, remove the pork from the slow cooker and shred with two forks. Return the shredded meat to the cooker to absorb the juices.

Assembling Tacos

    Warm the Tortillas

    Heat the tortillas on a dry skillet over medium heat for about 30 seconds on each side until warm.

    Build the Taco

    For each taco, add a generous amount of either the brisket or pulled pork, followed by desired toppings such as cilantro, diced tomatoes, sliced jalapeños, and a dollop of sour cream.

    Serve with Beer

    Serve the tacos with lime wedges and a cold can of Taco Truck Lager on the side.
