Prepare the Brisket
Pat the beef brisket dry with paper towels and trim excess fat, leaving about 1/4 inch of fat on the meat for flavor.

Make the Rub
In a small bowl, mix together the brown sugar, paprika, salt, black pepper, cumin, and chili powder to create a dry rub. Rub this mixture generously all over the brisket.

Sear the Brisket
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the brisket and sear on all sides until browned, about 4-5 minutes per side.

Remove the brisket from the skillet and place it in a slow cooker. In the same skillet, add the chopped onions and minced garlic, sautéing until softened, about 5 minutes. Pour this mixture over the brisket.
