Preparation of Vegetables

Preheat the oven
Preheat your oven to 425°F (220°C).

Chop the vegetables
Chop the bell peppers, zucchini, and red onion into bite-sized pieces. Halve the cherry tomatoes.

Toss with oil and spices
In a large bowl, combine the chopped vegetables with olive oil, salt, black pepper, and garlic powder. Toss until evenly coated.

Roast the vegetables
Spread the vegetables in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.

Spread the hummus
Once the vegetables are roasted, remove them from the oven and allow them to cool slightly. Take a tortilla and spread 1/4 cup of hummus evenly over the surface.

Add the spinach
Layer a handful of fresh spinach on top of the hummus.

Add the roasted veggies
Spoon the roasted vegetables onto the spinach layer, distributing them evenly.

Wrap it up
Fold in the sides of the tortilla and then roll it up from the bottom to the top, enclosing the filling.

Slice and serve
Slice the wrap in half diagonally and serve immediately, or wrap in foil for a lunch on the go.
