Beans Preparation

    Soak the Beans

    Rinse the dried navy beans under cold water and place them in a large bowl. Cover the beans with water and let them soak overnight.

    Cook the Beans

    In a large pot, drain the soaked beans and add 6 cups of fresh water. Add the Arkansas ham hock, chopped onion, minced garlic, bay leaves, black pepper, and salt. Bring to a boil over medium-high heat, then reduce to low and simmer for about 1.5 to 2 hours until the beans are tender.

    Remove Ham Hock

    Once the beans are cooked, remove the ham hock from the pot. Let it cool slightly, then shred the meat off the bone and return the meat to the pot, discarding the bone and skin.

Greens Preparation

    Prepare the Greens

    Wash the local greens thoroughly and remove the tough stems. Chop the leaves into bite-sized pieces.

    Sauté the Greens

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant.

    Cook the Greens

    Add the chopped greens to the skillet and sauté for 5-7 minutes until wilted and tender. Finish with a squeeze of lemon juice and season with salt to taste.
