Prepare the Sweet Potatoes
Preheat your oven to 400°F (200°C). Wash and poke holes in the sweet potatoes with a fork. Place them on a baking sheet and bake for about 45-60 minutes, or until tender. Let cool, then peel and mash until smooth.

Mix Dry Ingredients
In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

Combine Wet Ingredients
In a large bowl, beat the eggs. Add the mashed sweet potatoes, vegetable oil, and vanilla extract. Mix until fully combined.

Combine Mixtures
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.

Bake the Cake
Pour the batter into a greased 9x13 inch baking pan. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely.

Prepare the Pecans
In a medium skillet over medium heat, melt the butter. Add the pecans, brown sugar, and ground cinnamon. Stir until the pecans are evenly coated.

Cook the Pecans
Continue to cook, stirring frequently, for about 5-7 minutes, or until the pecans are toasted and the sugar has caramelized. Remove from heat and let cool on parchment paper.
