Main Ingredients

Caramelized Onions

Method

Preparing the Mushrooms

  1. 1

Preheat your oven to 400°F (200°C).

  2. 2

Clean the portobello mushrooms with a damp cloth to remove any dirt.

  3. 3

Remove the stems and gills from the mushrooms using a spoon.

  4. 4

Brush both sides of the mushrooms with olive oil, and season with salt and black pepper.

  5. 5

Place the mushrooms on a baking sheet, gill side up, and set aside.

Caramelizing the Onions

  1. 6

Slice the onions into thin rings.

  2. 7

In a large skillet, melt the butter over medium heat.

  3. 8

Add the sliced onions to the skillet and stir to coat with the butter.

  4. 9

Cook the onions, stirring occasionally, for about 15-20 minutes until they are soft and golden brown.

  5. 10

Add the balsamic vinegar and brown sugar to the onions, and cook for an additional 5 minutes, stirring frequently.

Baking and Serving

  1. 11

While the onions are caramelizing, place the mushrooms in the preheated oven and bake for 15 minutes.

  2. 12

Once the mushrooms are done, remove them from the oven and top each mushroom with a generous amount of caramelized onions.

  3. 13

Serve warm as a delicious appetizer or side dish.
