Scrambled Eggs

Method

Pancakes

  1. 1

    Prepare the Batter

In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.

  2. 2

    Mix Wet Ingredients

In another bowl, whisk together the milk, egg, and melted butter until smooth.

  3. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.

  4. 4

    Cook the Pancakes

Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side.

Gravy

  1. 5

    Cook the Sausage

In a large skillet over medium heat, cook the ground sausage until browned and fully cooked, breaking it apart with a spatula.

  2. 6

    Make the Roux

Sprinkle the flour over the cooked sausage and stir to combine. Cook for about 1 minute.

  3. 7

    Add Milk and Season

Gradually whisk in the milk, stirring constantly to prevent lumps. Add black pepper and salt. Bring to a simmer and cook until thickened, about 3-5 minutes.

Scrambled Eggs

  1. 8

    Whisk Eggs

In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.

  2. 9

    Cook the Eggs

In a non-stick skillet, melt the butter over medium-low heat. Pour the egg mixture into the skillet and let it sit for a few moments. Gently stir with a spatula until the eggs are softly scrambled, about 3-4 minutes.
