Preparation of Beans

    Cook Pinto Beans

    In a small saucepan, heat the pinto beans over medium heat until they are warmed through. Stir occasionally to prevent sticking. This should take about 5 minutes.

Cooking Tortillas

    Warm Corn Tortillas

    In a skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until they are soft and pliable. Keep them warm by wrapping them in a clean kitchen towel.

    Fry Eggs

    In a non-stick skillet, heat a little oil over medium heat. Crack the eggs into the skillet and cook for about 2-3 minutes or until the whites are set and the yolk is still runny. If you prefer your yolks firmer, cook them a little longer.

Assembly

    Assemble Ozark Huevos

    On a plate, lay down the warm tortillas. Spoon the warmed pinto beans evenly over the tortillas. Place the fried eggs on top of the beans. Sprinkle with chopped fresh cilantro and diced red onion. Drizzle the trio of taco sauces over the top.
