Mushroom Preparation

Prepare the Portobello Mushrooms
Gently clean the Portobello mushroom caps with a damp cloth to remove any dirt. Remove the stems and gills using a spoon.

Slice the Onion
Cut the onion into thin slices.

Sauté the Onions
In another skillet, heat 1 tablespoon of olive oil over medium-low heat. Add the sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for about 15-20 minutes until the onions are golden brown and caramelized.

Add Balsamic Vinegar
Once the onions are caramelized, add 1 tablespoon of balsamic vinegar and stir well. Cook for an additional 2 minutes.

Melt the Cheese
Preheat the oven to 350°F (175°C). Place the sautéed Portobello mushrooms on a baking tray. Top each mushroom cap generously with the caramelized onions and sprinkle with vegan mozzarella cheese.

Bake
Bake in the preheated oven for 10 minutes or until the cheese is melted and bubbly.

Remove from the oven, garnish with fresh basil, and serve warm.
