Prepare the Grits

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Gradually whisk in 1 cup of grits and reduce heat to low. Stir frequently and cook until thickened, about 15-20 minutes. Once cooked, stir in shredded gouda cheese until melted and creamy. Set aside.

Prepare the Filling

    Sauté the Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add diced bell pepper and local greens. Sauté until the greens are wilted and the peppers are tender, about 5-7 minutes.

    Cook the Eggs

    In a separate bowl, whisk together the eggs, adding salt and black pepper to taste. Pour the mixture into the skillet with the sautéed vegetables and scramble until fully cooked, about 3-5 minutes.

Assemble the Burritos

    Fill the Tortillas

    Lay a flour tortilla flat on a clean surface. Spoon a quarter of the creamy gouda grits, followed by a quarter of the scrambled egg and vegetable mixture, and sprinkle with sliced scallions.

    Roll the Burrito

    Fold in the sides of the tortilla and then roll it tightly from the bottom up. Repeat with remaining tortillas and filling.
