    Preheat your oven to 425°F (220°C). In a large bowl, combine the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined.

    Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick round and cut out biscuits. Place on a baking sheet and bake for 15-20 minutes until golden brown.

Gravy

    In a skillet over medium heat, cook the sausage until browned. Remove from the skillet and set aside.

    In the same skillet, add flour to the drippings and whisk to combine. Gradually add milk while whisking continuously until thickened. Season with black pepper and salt.

Eggs

    In a non-stick skillet, cook the eggs sunny-side up or however you prefer them. Season with salt and pepper.

Assembly

    Slice the baked biscuit in half. Layer with crispy potatoes, caramelized onions, a slice of pepper jack cheese, and the cooked eggs. Top with sausage gravy. Serve warm.
