Biscuits

    Prepare the Biscuit Dough

    In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Mix well.

    Cut in the Butter

    Add the cold unsalted butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

    Add Milk

    Pour in the milk and stir until just combined. Do not overmix. Turn the dough onto a floured surface and pat into a 1-inch thick round.

    Cut and Bake

    Using a biscuit cutter, cut out biscuits and place them on a baking sheet. Bake in a preheated oven at 425°F (220°C) for 12-15 minutes or until golden brown.

Sausage or Veggie Gravy

    Cook the Sausage

    In a large skillet over medium heat, cook the breakfast sausage until browned. If using veggie sausage, cook according to package instructions.

    Sprinkle the flour over the cooked sausage and stir until well combined. Cook for 2-3 minutes.

    Gradually whisk in the milk, stirring constantly until the gravy thickens. Season with salt, black pepper, and red pepper flakes.

Potatoes

    Prepare the Potatoes

    Wash and dice the potatoes into small cubes.

    In a skillet, heat the olive oil over medium heat. Add the diced potatoes and season with salt and black pepper. Cook until golden brown and crispy, about 15-20 minutes.

Caramelized Onions

    Slice the onion thinly.

    Caramelize the Onion

    In a separate skillet, melt the butter over medium-low heat. Add the sliced onion and cook, stirring occasionally, until golden brown and caramelized, about 20 minutes.

Assembly

    Assemble the Sandwich

    Slice the freshly baked biscuits in half. Layer with crispy potatoes, caramelized onions, sausage or veggie gravy, and top with a slice of pepper jack cheese. Serve hot.
