Method

Prepare the Grits

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in 1 cup of grits and 1 tsp of salt. Reduce the heat to low and cover. Cook for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy.

    Add Cheese

    Once the grits are cooked, stir in 2 tbs of cream cheese and 1 cup of shredded Gouda cheese until melted and well combined. Keep warm.

Sauté the Greens and Vegetables

    Sauté Aromatics

    In a large skillet, heat 2 tbs of olive oil over medium heat. Add 2 minced garlic cloves and sauté for about 1 minute until fragrant.

    Cook Vegetables

    Add 1 cup of diced bell pepper and 1 cup of diced onion to the skillet. Cook for about 5-7 minutes until softened.

    Add Greens

    Stir in 4 cups of chopped local greens. Season with 1 tsp of salt and 1 tsp of black pepper. Cook for an additional 5-10 minutes until the greens are wilted and tender.

    Garnish

    Remove from heat and stir in the sliced scallions. Set aside.

Cook the Eggs

    Fry the Eggs

    In a small non-stick skillet, melt 1 tbs of butter over medium heat. Crack 2 large eggs into the skillet and cook to your desired doneness (sunny-side up or over-easy).

Assemble the Dish

    Serve

    Spoon the creamy gouda grits into bowls. Top with the sautéed greens and vegetables, followed by the fried eggs. Serve hot and enjoy!
