Prepare the egg mixture
In a large mixing bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.

Heat the skillet
Place a non-stick skillet or griddle over medium heat and add 1 tablespoon of butter. Allow it to melt and coat the surface.
Cooking

Dip the brioche slices
Take each slice of brioche bread and dip it into the egg mixture, ensuring both sides are well coated. Allow any excess mixture to drip off.

Cook the French toast
Place the coated brioche slices onto the heated skillet. Cook for about 3-4 minutes on each side, or until they are golden brown and cooked through.
Serving

Serve with maple syrup
Once cooked, remove the French toast from the skillet and place it on a serving plate. Drizzle with maple syrup to taste and serve warm.
