Preparing the Meat

Cook the Meat
In a skillet over medium heat, cook the bacon or sausage links until cooked through and crispy. This should take about 5-7 minutes. Remove from heat and set aside.

Prepare the Water
Fill a saucepan with about 3 inches of water. Add the white vinegar and bring to a gentle simmer over medium heat.

Poach the Eggs
Crack each egg into a small bowl then gently slide it into the simmering water. Poach the eggs for about 3-4 minutes for runny yolks or longer for firmer yolks. Remove the eggs with a slotted spoon and drain on paper towels.
Making the Hollandaise Sauce

Melt the Butter
In a saucepan, melt the unsalted butter over low heat until it's completely melted. Remove from heat and let cool slightly.

Add Seasoning
Stir in the lemon juice, salt, and a pinch of cayenne pepper. Adjust seasoning to taste.
Assembling the Dish

Toast the English Muffins
Split the English muffins in half and toast them until golden brown.

Build the Benny
Place a slice of cooked meat on each toasted English muffin half, top with a poached egg, and generously drizzle with hollandaise sauce.

Serve immediately while warm, optionally garnished with fresh herbs or a sprinkle of paprika.
