    Prepare the Vegetables

    Wash and chop all the seasonal vegetables: bell pepper, zucchini, spinach, cherry tomatoes, and onion. Set aside.

    Beat the Eggs

    In a mixing bowl, crack the eggs and add milk, salt, and black pepper. Whisk until well combined and frothy.

    Sauté the Vegetables

    In a non-stick skillet, heat a small amount of oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent. Then add bell pepper, zucchini, and cook for another 3-4 minutes. Finally, add the spinach and cherry tomatoes, cooking until the spinach is wilted, about 1-2 minutes.

    Cook the Omelette

    Push the sautéed vegetables to one side of the skillet. Pour the beaten eggs into the other side, tilting the skillet to spread the eggs evenly. Cook for about 3-4 minutes or until the edges start to set.

    Add Toppings and Finish Cooking

    If using cheese and fresh herbs, sprinkle them over the eggs and vegetables. Gently fold the omelette in half and cook for another 1-2 minutes until the cheese is melted and the eggs are fully cooked.
