    Prepare the Potatoes

    Wash, peel, and dice the potatoes into small cubes. Place them in a pot of salted water and bring to a boil. Cook for about 10 minutes or until slightly tender but not fully cooked. Drain and set aside.

    Chop the Vegetables

    Dice the bell pepper and onion, and chop the zucchini into half-moon shapes. Rinse the spinach and set aside.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 3-4 minutes until they begin to soften.

    Add Potatoes and Zucchini

    Add the partially cooked potatoes and chopped zucchini to the skillet. Season with salt and black pepper. Cook for another 8-10 minutes, stirring occasionally, until the potatoes are golden brown and crispy.

    Add Spinach

    Once the potatoes and zucchini are cooked, add the fresh spinach. Stir and cook for another 2-3 minutes until the spinach has wilted.

    Cook the Eggs

    In a separate pan, prepare the eggs to your liking (sunny side up, scrambled, or poached). Cook them while the vegetable mixture finishes sautéing.

Serving

    Assemble the Hash Bowl

    Spoon the sautéed vegetable and potato mixture into bowls. Top each bowl with cooked eggs. Garnish with fresh parsley and sliced avocado if desired.
