Preparing the Potatoes

    Roast the Potatoes

    Preheat your oven to 425°F (220°C). Wash and dice the russet potatoes into small cubes. In a large bowl, toss the diced potatoes with olive oil, salt, and black pepper until they are well coated. Spread the potatoes on a baking sheet in a single layer and roast in the oven for about 25-30 minutes or until golden brown and crispy, flipping halfway through.

    Sauté Chorizo and Veggies

    In a large skillet over medium heat, add the chorizo sausage. Cook it for about 5-7 minutes until browned and cooked through, breaking it apart with a spatula. Add the chopped onion, bell pepper, zucchini, and minced garlic to the skillet. Sauté for an additional 5-7 minutes until the vegetables are tender.

    Cook the Eggs

    In a separate non-stick skillet, cook the two large eggs sunny-side up or to your preferred doneness. Season with a pinch of salt and pepper as they cook.

Combining the Dish

    Assemble the Farmer's Hash

    Once the potatoes are roasted and crispy, remove them from the oven and mix them with the chorizo and vegetable mixture in the skillet. Serve the hash on plates, topped with the cooked eggs and a sprinkle of chopped scallions.
