Preparing the Grits

Add Cream and Cheese
Once the grits are cooked and thick, stir in 4 oz of cream cheese and 1 cup of shredded Gouda cheese. Mix until the cheeses are melted and well incorporated. Season with black pepper to taste.
Sautéing Greens and Veggies

Heat the Oil
In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Sauté Garlic and Veggies
Add 2 minced garlic cloves and diced bell pepper to the skillet. Sauté for about 2-3 minutes until fragrant.

Cook the Greens
Add the chopped local greens to the skillet. Sauté for an additional 5-7 minutes, stirring frequently, until the greens are wilted and tender. Season with salt and black pepper to taste.

Add Scallions
Stir in the chopped scallions and cook for another 1-2 minutes until heated through, then remove from heat.

Cook the Eggs
In a small non-stick skillet, cook the 2 large eggs to your preference (fried, poached, or scrambled). Season with salt and black pepper to taste.

Spoon a generous serving of creamy Gouda grits onto each plate.
