Preparation of Salad Filling

Rinse and Drain Chickpeas
Open the can of chickpeas, pour them into a colander, and rinse under cool running water. Allow them to drain well.

Chop Vegetables
Dice the red bell pepper and cucumber into small pieces. Finely chop the red onion and fresh parsley.

Mix Ingredients
In a large mixing bowl, combine the rinsed chickpeas, diced red bell pepper, diced cucumber, chopped parsley, and finely chopped red onion.

Add Craisins
Add the Craisins to the mixture in the bowl.

Season the Mixture
In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper. Pour this dressing over the salad mixture and toss everything together until well combined.
Assembling the Wrap

Prepare the Spinach Wraps
Lay out the spinach wraps on a clean, flat surface.

Fill the Wraps
Spoon an even amount of the chickpea salad mixture onto the center of each spinach wrap.

Wrap the Salad
Fold the sides of the spinach wrap over the filling, then roll it up from the bottom to enclose the filling completely.

Cut the wraps in half if desired and serve immediately, or wrap them in foil for a meal on the go.
