Method

Preparing the Salsa

    Mix the Ingredients

    In a medium bowl, combine the diced tomatoes, chopped onion, chopped cilantro, jalapeño (if using), lime juice, and salt. Mix well until all ingredients are evenly combined.

    Chill the Salsa

    Cover the bowl with plastic wrap and refrigerate the salsa for at least 15 minutes to allow the flavors to meld.

Making the Burrito Filling

    Scramble the Eggs

    In a large skillet, crack the eggs and whisk them together. Cook over medium heat, stirring frequently, until the eggs are fully cooked but still moist, about 3-5 minutes.

    Add Beans and Cheese

    Add the drained black beans and shredded cheddar cheese to the scrambled eggs. Stir gently until the cheese has melted and is evenly distributed, about 2 minutes.

Assembling the Burrito

    Prepare the Tortillas

    Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, just until pliable.

    Fill the Tortillas

    Place a generous portion of the egg and cheese mixture in the center of each tortilla. Add a spoonful of the homemade salsa on top.

    Fold the sides of the tortilla over the filling, then roll from the bottom up to form a burrito. Ensure the filling is securely wrapped inside.
