Biscuit Base

Prepare the Biscuit Dough
In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Gradually add the milk, stirring until just combined.

Shape and Bake the Biscuits
Turn the dough onto a floured surface and knead gently for about 1 minute. Pat into a 1-inch thick circle and cut into rounds. Place on a baking sheet and bake in a preheated oven at 425°F (220°C) for 12-15 minutes or until golden brown.

Poach the Eggs
In a pot of simmering water, add the white vinegar. Crack the eggs into a small bowl and gently slide them into the water. Poach for 3-4 minutes or until the whites are set but yolks are still runny. Remove with a slotted spoon and drain on paper towels.
Ozark Greens

Prepare the Greens
In a large bowl, combine the mixed greens, olive oil, lemon juice, and salt and pepper. Toss gently to combine and set aside.
Hollandaise Sauce

Make the Hollandaise Sauce
Melt the unsalted butter in a small saucepan over low heat. In a separate bowl, whisk together the egg yolks, lemon juice, and salt. Slowly drizzle in the melted butter while whisking continuously until the sauce thickens. Add cayenne pepper to taste.
Assembly

Assemble the Benny on a Biscuit
To serve, place a biscuit on a plate, top with a slice of ham, a poached egg, and a generous drizzle of hollandaise sauce. Serve with a side of Ozark greens.
