Split the English muffins in half and toast them until golden brown.

Cook the Eggs
Bring a pot of water to a gentle simmer. Crack the eggs into individual small bowls. Gently slide the eggs into the simmering water. Poach the eggs for about 3-4 minutes until the whites are set but the yolks remain runny. Remove with a slotted spoon and set aside.

Prepare the Canadian Bacon
In a skillet over medium heat, cook the Canadian bacon slices until heated through and slightly crispy, about 2-3 minutes per side.

Heat the Smoked Salmon
Briefly warm the smoked salmon in the same skillet for about 1 minute, just to heat it up.

Warm the Crab Meat
In a small saucepan, gently heat the crab meat over low heat for about 2-3 minutes until warmed through. Be careful not to overcook.
Making the Sauce

Prepare the Hollandaise Sauce
In a heatproof bowl, whisk together the egg yolks, lemon juice, and Dijon mustard. Place the bowl over a saucepan of simmering water (double boiler). Slowly whisk in the melted butter until the sauce thickens, about 5 minutes. Season with salt and white pepper to taste.
