Method

Cake Base Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Prepare a 9-inch round cake pan by greasing it with butter and lightly dusting it with flour.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  3. 3

    Cream Butter and Sugar

In another bowl, cream the softened butter until smooth. Gradually add the sugar and continue to cream until the mixture is light and fluffy.

  4. 4

    Add Eggs and Vanilla

Add the eggs one at a time to the creamed butter mixture, mixing well after each addition. Stir in the vanilla extract.

  5. 5

    Combine Mixtures

Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined, being careful not to overmix.

  6. 6

    Bake the Cake

Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

  7. 7

    Cool the Cake

Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Seasonal Fruit Topping Preparation

  1. 8

    Prepare the Fruit

In a mixing bowl, combine the sliced strawberries, blueberries, and diced peaches.

  2. 9

    Mix with Honey and Lemon

Drizzle honey and lemon juice over the mixed fruit and gently toss until the fruit is coated. Set aside to let the flavors meld.

Whipped Cream Preparation

  1. 10

    Whip the Cream

In a medium bowl, beat the heavy cream with an electric mixer on medium speed until it starts to thicken.

  2. 11

    Add Sugar and Vanilla

Add the powdered sugar and vanilla extract, then continue to beat until soft peaks form. Be careful not to overwhip.

Assembly

  1. 12

    Layer the Cake

Once the cake has cooled, place one layer on a serving plate. Spread a layer of whipped cream over the top.

  2. 13

    Add Fruit Topping

Spoon a generous amount of the seasonal fruit mixture over the whipped cream.

  3. 14

    Repeat Layers

If using multiple layers, repeat the process with the remaining cake layers, whipped cream, and fruit.

  4. 15

    Final Touch

Top the final layer with whipped cream and any remaining fruit. Serve immediately or refrigerate until ready to serve.
