Meatballs
Method
Cooking Pasta
- 1
Boil the Pasta
In a large pot, bring water to a boil. Add 2 cups of macaroni noodles and cook according to package instructions until al dente. Drain and set aside.
- 2
Make Cheese Sauce
In the same pot, melt 2 tablespoons of butter over medium heat. Add 2 tablespoons of flour and whisk constantly for about 1 minute to create a roux. Gradually pour in 1 cup of milk, continuing to whisk until the mixture thickens. Stir in 1 cup of shredded cheddar cheese, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of garlic powder until smooth.
- 3
Combine Pasta and Sauce
Add the drained macaroni back into the pot with the cheese sauce. Stir well to ensure all the pasta is coated with the sauce. Set aside.
Making Meatballs
- 4
Prepare the Meatball Mixture
In a mixing bowl, combine 1 pound of ground beef, 1 cup of breadcrumbs, 1/4 cup of grated Parmesan cheese, 1 whole egg, 1 teaspoon of Italian seasoning, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper. Mix until well combined.
- 5
Form the Meatballs
Preheat your oven to 400°F (200°C). Using your hands, form the meat mixture into meatballs about 1 inch in diameter and place them on a baking sheet lined with parchment paper.
- 6
Bake the Meatballs
Bake the meatballs in the preheated oven for 20-25 minutes or until they are cooked through and browned.
Assembling the Dish
- 7
Combine Everything
Once the meatballs are cooked, place them on top of the macaroni and cheese in the pot. Gently mix to combine, ensuring the meatballs are evenly distributed.
- 8
Serve
Spoon Jeremy's Mac n' Meatballs into bowls and enjoy while hot. Optionally, sprinkle some additional Parmesan cheese on top before serving.
