Method

Tuna Preparation

  1. 1

    Season the Tuna

Pat the yellow fin tuna steaks dry with paper towels. Rub each steak with olive oil, then season generously with salt and black pepper on both sides.

  2. 2

    Sear the Tuna

Heat a large skillet over high heat until hot. Add the seasoned tuna steaks and sear for about 1-2 minutes on each side for rare. Remove from heat and sprinkle sesame seeds on both sides.

  3. 3

    Rest the Tuna

Let the seared tuna rest for a minute before slicing it thinly against the grain.

Seaweed Salad

  1. 4

    Prepare the Seaweed

Soak the dried wakame seaweed in warm water for about 10 minutes until it expands and softens. Drain and set aside.

  2. 5

    Slice the Vegetables

Julienne the cucumber and carrot into thin strips.

  3. 6

    Mix the Salad

In a bowl, combine the soaked seaweed, julienned cucumber, and carrot. In a separate small bowl, whisk together rice vinegar, soy sauce, sesame oil, and sugar. Pour the dressing over the salad and toss to coat. Season with salt to taste and sprinkle with sesame seeds.

Ginger Soy Sauce

  1. 7

    Prepare the Ginger Soy Sauce

Grate or finely chop the fresh ginger. In a small bowl, mix the ginger with soy sauce and mirin until combined.
