Burger Preparation

Prepare the Beef Patties
In a mixing bowl, gently combine the Maine Family Farm Beef with salt and pepper to taste. Shape the mixture into two equal-sized patties, about ¾ inch thick. Make a slight indentation in the center of each patty to prevent them from puffing up while cooking.

Cook the Beef Patties
In the same skillet, use the rendered bacon fat to cook the beef patties. Cook for about 4-5 minutes on one side, then flip. Top each patty with 2 oz of Vermont Cheddar cheese and cook for an additional 3-4 minutes for medium doneness.

Prepare the Vegetables
While the patties are cooking, wash the lettuce leaves and slice the tomato and red onion. Cut the tomato into thick slices and the red onion into thin rings.

Assemble the Burger
On the bottom half of each toasted brioche bun, layer a lettuce leaf, a cooked beef patty topped with melted cheddar, two slices of bacon, a slice of tomato, and a few rings of red onion. Place the top half of the bun on top to complete the burger.
